Chicken Fest: Day 4
My wonderful wife was able to get a review of Zaycon Frozen Chicken. We received 40 lbs of frozen boneless skinless chicken breasts, which we split with Ann. I was wondering how we would go about trying the chicken and started to think about all the different dishes that use chicken, so in honor of Milwaukee, city of festivals, I came up with CHICKEN FEST.
If chicken isn't necessarily your thing, Zaycon also offers turkey, pork, beef, fish and even various fruits. So check out their website to find something you like.
Today Betsy and I continue our culinary travels with a BBQ sandwich.
CHICKEN FEST: DAY 4
Shredded BBQ Chicken Sandwich
This is a pretty simple recipe all you will need equipment wise is a saucepan, a bowl, and a couple forks. As for ingredients you will need the following.
Place the chicken in the saucepan and add enough chicken broth as to cover the chicken. Bring the broth to a boil, turn the heat to medium low and boil for 15 minutes. Remove from heat, leave the chicken in the broth, and allow to cool for 10 minutes. Pat the chicken dry with a paper towel, then using two forks, shred the chicken to the desired consistency.
Add as much or as little of your favorite BBQ sauce to the bowl and mix until chicken is coated. Don't worry about having to drench the chicken in sauce, you can always add more when you build your sandwich.
For a change of pace, we used pretzel rolls for our sandwiches. We served it with some chips and potato salad to give it that picnic feel. Hope you enjoy it, we did.
