So the Pack is half way to regular season perfection, thanks mostly in part to the near perfect play of Aaron Rodgers and some very timely plays by the defense. Both were on display against the Chargers last week as Rodgers had another 4 TDs and the defense added 3 interceptions, returning 2 for TDs. The part that worries me though is the pass defense, which just continues to give up large amounts of yards. The word from the team is that there is continued mis-communication in the secondary. They are missing Nick Collins, but you would think that Charlie Peprah would be ready since he started most of last season after Morgan Burnett went down for the season with a knee injury. I heard that Collins was going to be attending more meetings starting this week as a way to help out, we'll see if it makes a difference going forward, because I am not sure we can rely on the offense scoring 35 points every week.
This week the Vikings come to town for a Monday night clash. The Vikings are starting a rookie QB, after deciding that the Donovan McNabb experiment was over, so the passing attack might be lacking some, but they still have Adrian Peterson, so they have a pretty big weapon that has to be contained. Defensively we have to go up against Jared Allen, who is among the league leaders in sacks, and has had some really big games against us in the past, hopefully Marshall Newhouse, still playing for injured Chad Clifton, is up to the task.
I am fairly certain we are going to win this game, we are bound to lose eventually, I am pretty confident though that it won't be this week. Or hopefully the next two, because I am going to be at those games.
A Monday night game allows for more than just a snack option for eating. I suggest one of the most popular meals in our house, Chicken Pot Pie made with
Philadelphia Savory Garlic Cooking Creme. You begin with two chicken breasts, a container of cooking creme, your favorite pot pie vegetables, we use carrots and corn, and a
pie crust.
The chicken can be prepared in different ways depending on your preference. You could shred it, I just cut it into pieces and put it into a frying pan with some olive oil to get it cooked.
Once the chicken is cooked add your vegetables to the pan.
Mix and cook for a couple minutes, allowing the veggies to heat up. Then add the cooking creme.
Mix together and heat for a couple minutes until the creme is warm. Then pour your mixture into a pie plate.
Of course you will top this off with a pie crust. If you are ambitious you could make your own crust, or you could just pick up a Pillsbury Refrigerated Crust. Trim your crust to fit your pie plate and make sure to put slits into the crust to allow steam to escape. I marked ours with a B (for Betsy) and put it into a 400 degree oven.
After 25-30 minutes, the crust should have a nice light brown look to it.
Leave it for a couple minutes to allow it to cool and then serve up and enjoy.
