I recently found myself on my own for dinner one night, as Betsy was attending an important meeting. This left me to decide what I wanted to have for dinner, I wanted something that would be tasty to eat and that didn't require a lot of effort to prepare. Searching through the freezer I hit upon something that fit both my criteria:
A Bon Appetit Steam-Baked Oven-Ready Complete Meal.
This one was Smoked Apple & Uncured Bacon Chicken. I remember picking this one because it had bacon, how can you resist bacon? It makes everything better.
Inside the outer bag are two parchment pouches that contain all your ingredients:
Each parchment pouch contained a grilled whole chicken breast, Parisian carrots (which are spherical in shape, maybe that's what makes them Parisian), roasted red potatoes, roasted red peppers, smoked apples, & uncured bacon crumbles in a sweet Dijon sauce. Each parchment pouch weighs in at 11.33 oz.
Since it was just going to be for me, I only made one bag and put the other back in the freezer.
Preparation could not be easier, just place the parchment pouch(es) on a cookie sheet and put in a 350 degree oven for 30 to 32 minutes. When it is done, simply cut the parchment pouch along the dotted line and slide the contents onto your plate. I combined mine with some brown rice and some bread.
The chicken was quite moist, the carrots, potatoes, peppers, and apples combine to add varying textures and flavors, and the sauce was not only sweet but also added a nice tanginess to the dish.
I haven't decided yet if I am going to share the remaining portion with Betsy or keep it for myself to enjoy the next time I find myself alone for dinner.
