From Mr. Betsy's Oven - Peanut Butter Pie

I was asked to make dessert for Thanksgiving so in addition to making a traditional apple pie I decided to bring something non-traditional as well.

I had found a recipe for peanut butter pie on the internet but I wanted to put my own twist on it by making the crust a little differently, so I made it out of:

The crust is prepared just like a graham cracker crust, to make it you will need the following:

6 cups Cap'n Crunch's Peanut Butter Crunch Cereal
(I have also done a chocolate version with Cocoa Puffs)

1/2 cup butter - melted

1 TBS sugar

Preheat oven to 350 degrees.  Put cereal into container of food processor and pulse repeatedly until cereal is broken down into a fine dust.

In a separate bowl, combine the cereal dust, sugar and butter.

Place mixture into 9 inch pie plate and press into an even layer that covers the bottom and up the sides.

Bake for 15 minutes, then remove to rack and allow to cool completely before adding filling.

For the filling you will need the following:

1.5 cups heavy whipping cream
1/4 cup sugar
8 oz cream cheese - softened
1 cup crunchy or creamy peanut butter
1 cup powdered sugar

Whisk together heavy whipping cream and regular sugar, set aside.

Mix all other ingredients until smooth.

Stir in whipping cream/sugar mixture until well blended.

Pour filling into cooled pie crust, spreading it out evenly.  Chill until ready to serve.

Unfortunately, the pie was cut into and eaten before I could take a final result picture, but I can assure you it looked great.

The filling has a wonderful creamy peanut butter texture and the Cap'n Crunch crust adds a wonderful crispy layer to the pie.  I hope you enjoy it if you give it a try.

Thanks for reading.

Not overly impressed with a pie that is so fattening. With the holidays coming, I would think you would want to go with a healthier alternative. Also, while I appreciate the "tidbits" thrown in, My Milwaukee Mommy should be represented by MOMMIES, not their husbands.

Your "Anonymous" comment is unbelievably rude and disrespectful. Apparently you were not brought up with the motto If you don't have something nice to say, don't say anything at all.

And fact of the matter is, WHO CARES about who made the recipe. In some households the Men cook/bake -- that doesn't make Milwaukee Mommy any less of a Mommy.

If you don't like what you are reading either skip the post or stop reading altogether and stop being so ungrateful.

Thanks for the post! It is always nice to have something new this time of year to share at holiday parties.

It is unfortunate that not everyone has the holiday spirit! Its the holidays and most people are ready to indulge and if not you would think they would skip the post on Peanut Butter Pie :)

Thanks to Mr Betsy :) for sharing his recipe! I appreciate it!
