Betsy and I received a catalog from
Penzeys in the mail.
The catalog included a coupon for a free jar of Cinnamon Sugar, so we decided to check out the store, as we had never been there before.
While we walked around the store we noticed that there were all sorts of recipe cards that gave different things to try out with some of their spices. We picked out the Arizona Dreaming Taco Baskets. Here are the spices we needed to make them.
Arizona Dreaming, Buttermilk Ranch Dressing Base, and Aleppo Pepper.
Here are the other things we needed.
Start by mixing 4 tsp. Arizona Dreaming, 1/4 tsp. salt, 1 TBS water, and 1 pound chicken cut into small bits in a bowl.
Cover the bowl and put it in the fridge. Preheat the oven to 350, spray two muffin pans with cooking spray and place wonton wrappers into the muffin cups. Bake the wontons for 5 minutes, make sure not to overcook them as they can burn fast and will be going back into the oven again. When you take them out of the oven, make sure the cups are open, you should be able to unfold the wrappers if they collapsed during cooking.
Heat 1 TBS oil in a skillet, add the chicken and cook until it is browned and cooked through.
In a bowl, mix together 1 TBS Buttermilk Ranch Dressing Base with 1 TBS water, let it stand for 5 minutes.
Then add 1/2 cup buttermilk and 1/2 cup mayo, then mix until smooth.
Combine the cooked chicken with 1/4 cup diced red pepper, 1 cup shredded cheddar cheese, 1 cup shredded southwest blend cheese, and the dressing, then mix them all together.
Using a TBS, scoop the filling into the wonton baskets, until all the baskets are full, adding more where needed to use up the filling.
Put them back in the oven for another 5 minutes or until the cheese has melted. Sprinkle them with Aleppo Pepper after removing from the oven.
Serve them warm, they can be made ahead of time and warmed up if necessary.
These made a fun snack dinner or as an option as an appetizer for a party. I used some of the Arizona Dreaming mixture later in the week and combined it with shredded chicken to make some chicken tacos for dinner, they were pretty good as well.
