52 Places to Visit In Wisconsin...Penzeys Spices


Betsy and I received a catalog from Penzeys in the mail.


The catalog included a coupon for a free jar of Cinnamon Sugar, so we decided to check out the store, as we had never been there before.

While we walked around the store we noticed that there were all sorts of recipe cards that gave different things to try out with some of their spices.  We picked out the Arizona Dreaming Taco Baskets.  Here are the spices we needed to make them.


Arizona Dreaming, Buttermilk Ranch Dressing Base, and Aleppo Pepper.

Here are the other things we needed.


Start by mixing 4 tsp. Arizona Dreaming, 1/4 tsp. salt, 1 TBS water, and 1 pound chicken cut into small bits in a bowl.


Cover the bowl and put it in the fridge.  Preheat the oven to 350, spray two muffin pans with cooking spray and place wonton wrappers into the muffin cups.  Bake the wontons for 5 minutes, make sure not to overcook them as they can burn fast and will be going back into the oven again.  When you take them out of the oven, make sure the cups are open, you should be able to unfold the wrappers if they collapsed during cooking.


Heat 1 TBS oil in a skillet, add the chicken and cook until it is browned and cooked through.


In a bowl, mix together 1 TBS Buttermilk Ranch Dressing Base with 1 TBS water, let it stand for 5 minutes.


  Then add 1/2 cup buttermilk and 1/2 cup mayo, then mix until smooth.


Combine the cooked chicken with 1/4 cup diced red pepper, 1 cup shredded cheddar cheese, 1 cup shredded southwest blend cheese, and the dressing, then mix them all together.


Using a TBS, scoop the filling into the wonton baskets, until all the baskets are full, adding more where needed to use up the filling.


Put them back in the oven for another 5 minutes or until the cheese has melted.  Sprinkle them with Aleppo Pepper after removing from the oven.


Serve them warm, they can be made ahead of time and warmed up if necessary.


These made a fun snack dinner or as an option as an appetizer for a party.  I used some of the Arizona Dreaming mixture later in the week and combined it with shredded chicken to make some chicken tacos for dinner, they were pretty good as well.

Chicken Soup for the Soul: Food and Love Review and Giveaway ENDS 3/10/12



I was recently given the opportunity to read and review Chicken Soup for the Soul: Food and Love: 101 Stories Celebrating Special Times with Family and Friends.  Every once in a while I need a good pick-me-up.  I love to head off to bed with a good book, snuggle under the sheets, and read something that will help lead me into happy slumbers.  The stories in this book I could totally relate to.  Let me start by saying I NEVER cooked, nor did I do ANYTHING in the kitchen before I got married.  So, I laughed, and I cried as I read some of these stories.  I could SO relate to so much of what they were saying.  But, as life went on, I learned to cook and now I actually LOVE to cook and experiment in the kitchen for my family.  There is even a section in the book entitled "Little Helpers" that focuses on our little helpers that are in the kitchen, pulling at our legs...wanting to do SOMETHING!  So, this book spoke to me on many levels.  I found myself not only reading this right before bed, but reading it in my downtime in between picking up the kids from school, waiting at the doctor's office, waiting for my computer to start up...I really couldn't put this down.  One of my favorite things about this book is how it touches so many areas of food...and love...and memories...all of which are so intertwined!  My mother passed away a little over a year ago and I wept through some of the stories in the section "In Memory Of..." thinking of her and some of our cooking stories.  This book is perfect for food lovers (so, basically, any of us...LOL!), cooks, and (as with all of the Chicken Soup for the Soul books)anyone who enjoys uplifting and inspiring stories.
There are also recipes sprinkled throughout the book...I cannot wait to try a few of them.  LOVE this book!

From Mr. Betsy's Oven - Waffles

For Christmas last year I received a waffle iron from my mother-in-law, I had wanted one for awhile but never got around to getting one myself.  Until now though I hadn't gotten around to using it.


I was organizing my collection of recipes and came across one I had saved from an old issue of Food Network Magazine.  It was for a waffle batter that was a copy of the batter used at Waffle House.


I have had the chance to go to the Waffle House a few times when I have gone on work trips to North Carolina and Texas.  I always get waffles and cheese grits, I consider it to be a southern version of George Webb's.  I decided that I should use my waffle iron and make myself some Waffle House waffles, it is certainly cheaper and less time consuming than traveling to the nearest one, which I believe is in Indiana.

Begin by whisking together 1.5 cups all-purpose flour, 1/3 cup sugar, 1/2 tsp salt, 1 tsp baking powder, and 1/2 tsp baking soda in a large bowl.


In a separate bowl, whisk together 1 egg, 1 cup whole milk, 1/2 cup buttermilk, and 2 tsp vanilla extract.


Add this mixture, 2 TBS melted butter and 1/4 melted vegetable shortening to the dry ingredients, and mix them until just combined (batter will be lumpy).


Then use your waffle iron to cook the batter.  Mine turned out like this.


They were crunchy on the outside and fluffy on the inside.  You can top them with whatever you want, fruit, butter, syrup, or any combination of the above.  You could also add chopped pecans or maybe chocolate chips to the batter to end up with extra flavorful waffles.
