From Mr. Betsy's Oven - Reuben's Two Ways

St. Patrick's Day is right around the corner, meaning sales of corned beef should be skyrocketing.  We always make reuben's for dinner around St. Patrick's Day, but we don't always make them in the traditional way.  Here is two ways we like to have reuben's.

Of course you have to start with preparing your corned beef.

Just follow the directions for preparation on the package and you end up with this.

Then slice your corned beef however you want, or if you have a meat slicer you could shave it as well.

The first reuben's we had were the non-traditional kind, we had reuben egg rolls.  You just need the traditional reuben ingredients, but you swap out the bread for egg roll wrappers.

Start by cutting the corned beef into little bits.

Then cut the slices of swiss cheese into triangles.

Also drain the sauerkraut.

To make the egg rolls you will need a bowl of water, which helps seal the wrappers.

Begin with the wrapper on a flat surface with one of the corners facing you.

Place one of the swiss cheese triangles near the corner that is facing you.

Place some of the sauerkraut on top of the cheese.

Put some of the corned beef on top of the sauerkraut.

Now we begin the rolling process, take the corner that is facing you and fold it over the filling.  Then dip your fingers in the water and run them around the edges of the wrapper from corner to corner to corner.

Then take the two side corners and fold them inwards, pressing down lightly to seal.

Roll the filling towards the last remaining corner, pressing lightly to seal the egg roll.

Repeat the process until you have used up all of your ingredients.  Half of the corned beef we had made 10 egg rolls.

You can fry them in a skillet or a deep fryer, I used a deep fryer.  Heat the oil to 375 degrees, and fry the egg rolls 3 or 4 at a time.

Fry them for about 3 minutes, turning them halfway through.  They are done when they are golden brown.

We serve them with the 1000 island dressing as a dipping sauce.

The wrappers turn out nice and crispy, the filling is warm, and the cheese melts wonderfully.  This is a fun way to enjoy a reuben in a new way.

We also made reuben's in the much more traditional manner.  Here is what we used, we prefer regular rye bread instead of marble rye bread.

I re-heated the corned beef by giving it a quick fry in a skillet, you could also microwave it of course.

Betsy likes her sandwich not toasted, so this is how she built her sandwich.  Put the meat on one slice of bread.

Cover it with cheese.

Add the sauerkraut.

Put on some 1000 island dressing.

Then enjoy.

I prefer mine made more like a grilled cheese.  So I butter two slices of bread and put them in a skillet.  I cover one with corned beef and cheese and the other with 1000 island dressing and sauerkraut.

When the bread is toasted I put the sandwich together.

Reuben's are a great sandwich, which we usually end up making a couple times a year, but we always make sure to have them around St. Patrick's Day.
