From Mr. Betsy's Oven - Celebrating Pi Day

No I didn't accidentally leave the e off the end of Pie, March 14th is Pi Day, the celebration of the number Pi, which is the numerical value for the ratio of a circle's circumference to its diameter.  An interesting fact about Pi is that it is a transcendental number, which means it is a decimal that never ends and never repeats, I am sure you are wondering how you got this far in life without knowing that, but I had to learn it in a Number Theory course in college and have never forgotten it.

Given that I am a math geek and I work in an industry that readily celebrates Pi Day I thought I would share with you what Betsy and I had for Pi Day.

I made a Potato-Bacon Torte from a recipe I found in one of my Food Network Magazines.


Mine didn't end up looking quite like that though.  Here is what you will need to make this.


Of course you can make your pie crust from scratch, I used the prepared pie crusts because I just didn't have the time to make them.  If you make the crust yourself, you will need two 10 inch round crusts.

Cook the bacon (I used 6 slices, you could use more or less to your taste) in a skillet over medium heat until crisp.


Allow to cool and drain on a paper towel, then crumble.


Bring 1 cup heavy cream and some pinches of thyme to a simmer over low heat. Remove from heat and let sit for 5 minutes.


Peel the potatoes (you will need 3 to 4 of them).


Cut the potatoes in half lengthwise, then slice thinly crosswise.


Lay one pie crust into a 9 inch pie plate.


Layer the sliced potatoes over the pie crust, overlapping slightly.


Sprinkle some salt and pepper on the potatoes and then sprinkle about 1/3 of the bacon on top of that.


Repeat the layering until you have used up all your ingredients, I ended up with 3 layers.


The recipe calls for 1/4 cup grated gruyere cheese, I couldn't find gruyere in grateable form or in shredded form when I went to the store, so I just picked up a package of sliced gruyere.  Using 4 slices I tore them into pieces and put them on top of the filling.


Next pour the whipping cream over the top, allowing it to seep down among all the potatoes.


Cover with the remaining pie crust.  Crimp the edges together and cut off any excess you may have around the edges.  Cut some holes in the top crust to allow for ventilation.  Then beat one egg in a bowl and brush it over the top of the crust so that you get that golden brown finish.


Bake in a 375 degree oven for 50 minutes.  You should cover the edges of the crust with foil or a pie crust protector to prevent them from burning, remove your cover when 15 minutes of cooking time remain.  Mine looked pretty good.


Allow the pie to sit for 20 minutes, this lets the filling set.  Then slice, serve, and enjoy.


It was really good and very creamy.  It was kind of like having some bacon scalloped potatoes in a pie, plus I really like gruyere cheese (gruyere is really good on french onion soup).  The next time I make it I will make sure to make my own pie crust, but the pre-made ones worked out fine.

You could also celebrate Pi Day by watching the movie Pi, if you are into movies about math that is.
