Kick Start Your New Years: Quick, Cheap and Easy Recipe Day Six: Red Potato Chicken

Red Potato Chicken
Ingredients:



  • 4 skinless, boneless chicken breast halves




  • 15 red potatoes (sliced)




  • 1 onion (sliced)




  • 1 (16 ounce) bottle Italian-style salad dressing






  • Directions:
      1. Preheat oven to 375 degrees F.
      2. Place chicken in a 9x13 inch baking dish. Arrange potato slices and onion slices around chicken, then cover all with salad dressing.
      3. Bake at 375 degrees F for 1 hour or until chicken is cooked through and juices run clear.
      4. ENJOY!
    I season the chicken with some garlic, salt, and pepper just for extra flacor.   Depending on how thinly you sliced your potatoes, you may have to cook a little longer so potatoes are done.  This is so good.  My kids and I gobbled it all up.  My husband was on the fence with this as the potatoes are never done enough for him.  If you like really soft potatoes, you may want to boil them for 15 - 20 minutes before adding them to the dish.  But, seriously, this is one of the easiest recipes I have ever tried!  LOVE IT!
