Kick Start Your New Years: Quick, Cheap and Easy Recipe Day Eight: Potatoes and Ham

Potatoes and Ham
Ingredients:

  • 5 pounds red potatoes, quartered

  • 1 (16 ounce) container sour cream

  • 1/2 cup butter

  • 1 (10.75 ounce) can condensed cream of chicken soup

  • 2 cups shredded Cheddar cheese

  • 1/4 cup chopped green onion

  • 4 cups cooked, chopped ham

  • salt and pepper to taste

  • 1 1/2 cups Parmesan cheese flavored bread crumbs

  • 1/4 cup melted butter


  • Directions:
      1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
      2. Place potatoes in a large pot of water, and bring to a boil. Boil until slightly tender, about 12 minutes. Drain, and transfer to a large bowl.
      3. Mix sour cream, butter, cream of chicken soup, Cheddar cheese, green onions, ham, salt and pepper with the potatoes. Spread mixture in the prepared baking dish. Sprinkle with bread crumbs, and drizzle with butter.
      4. Bake 30 minutes in the preheated oven.
      5. ENJOY!
    Okay, so not the  most healthy recipe, but it's really good!  It makes tons of food, so you should have leftovers for a couple days.  One thing that I did note was that the first time I made this, I used a cheaper, canned ham and it was not very good...too much grissle.  I would recommend using a good ham.  The flavor is EXCELLENT!  I also have made this and omitted the sour cream and used cream of mushroom soup in place of that...really good!  The perfect meal for a cold, winter day...a nice comfort food!
