Quick Dinner Ideas For a Busy Holiday Season - Gorton's Shrimp Poppers

We had the opportunity to try something from the Gorton's line of frozen seafood products.  As I was looking over their section of the frozen food isle, I spotted their shrimp poppers.  It brought me back to my high school days, when I would go to the Chancery on Monday nights with some friends from the football team for all you could eat deep fried shrimp, ah memories.

I decided that I wanted to go beyond just preparing the shrimp poppers and enjoying them with some cocktail sauce, so I checked out the recipe section of the Gorton's website for some ideas (www.gortons.com).  It is really easy to use, you just select what product you have on hand and multiple recipe options show up for you to pick from.  I decided to make Shrimp Po Boys.

You begin by preparing the shrimp (around 8oz of it if you have a bigger bag) as directed on the package.  They just bake in the oven for a short time and you flip them over once half way through.

The sauce is made up of 2 TBS Dijon Mustard, 4 dashes of hot sauce, 2 dashes of worcestershire sauce, and 1 1/2 tsp horseradish, just mix them in a bowl until blended.

To prepare the sandwich spread some of the sauce mixture on your bun (traditionally you would use a sub sandwich roll, but I had a different kind of bun in the house so that is what I used), put your shrimp on top of the sauce, and top that off with lettuce, tomato, and mayo.

I was able to make three sandwiches out of those ingredients.

The shrimp were meaty on the inside and crunchy on the outside, and they combined well with the sauce which was given a nice kick by the horseradish.  So transport yourself to Louisiana for dinner and make your own Shrimp Po Boy at home with the help of Gorton's, or check out the website (www.gortons.com) for other recipe ideas.

Enjoy.
