Polynesian Stir Fry with Pork Recipe

The "All Natural Whole Boneless Pork Loin" is on sale this week at Pick 'n Save until Wednesday for $1.99/pound.  This is a great item to purchase, chop up, and make several meals with! 
We asked for your input on different recipes to try and have had a few responses.  Here is one of the recipes that I am sure will be a huge hit!

Ingredients:
8 oz pineapple chunks
1 TBS cornstarch
2 TBS cold water
1 TBS soy sauce
2 TBS apricot preserve
1 pd pork loin,thinly sliced
3 tsp. canola oil
1 med onion,thinly sliced
1 small green pepper,thinly sliced
1 small sweet red pepper,thinly sliced
2 cups cooked rice


Directions:
-Drain pineapple, reserving juice, set aside.
-For sauce, in small bowl combine cornstarch and water. Stir in soy sauce, preserves and pineapple juice.
 -In large skillet or wok stir fry pork in 2 tsp. oil.  Remove and keep warm. 
-Stir fry onions and peppers in remaining oil for 3 minutes.
-Add pineapple and stir fry 2-3 minutes.
-Stir cornstarch mix and add to pan.
-Bring to boil until thickened.
-Add pork, heat through and serve over cooked rice.
