Boboli Pizza: Chicken Fajita Pizza Recipe Review

So, yesterday was Super Bowl Sunday.  I couldn't bring myself to cheer for any team that beat the Packers and knocked us out of the playoffs, so I was cheering for New England.  Unfortunatley, we all know how that turned out.  Even though there was a loss, we had fun eating and enjoying the game with great company!  We went to my parent's house and we were each to bring something to share.  We chose to bring over the ingredients to make a pizza!  We had a fun "Mexican" themed party and so we brought over all the ingredients to make a Chicken Fajita Pizza!  I was sent a sample of Boboli crust to use in this recipe.

Ingredients

1 12" Boboli® Original Pizza Crust
1 5-oz. pkg. Boboli® Pizza Sauce
1 boneless, skinless chicken breast
1 tsp. dried cumin
Salt and pepper to taste
1 tbsp. vegetable oil
1/4 c. each red, yellow and orange bell pepper, diced
1/2 small red onion, thinly sliced
1 c. Colby Jack cheese, shredded



Directions

Preheat oven to 450° F.
Bake time: 10 minutes

Cut the chicken breast into bite-sized pieces and sprinkle with cumin, salt and pepper to taste. Heat a skillet to medium and add 1 tablespoon of vegetable oil. Sauté peppers and onions until tender, about 2 minutes. Remove the vegetables and add the chicken breast pieces. Sauté until light brown and cooked through, about 5 minutes. Spread pizza sauce on crust and top with chicken, vegetables and cheese. Bake on ungreased cookie sheet 10 minutes or until crust is crisp and cheese is melted.


This was DELICIOUS!  Next time I plan on making this on the grill.  There are tons of recipes for custom pizzas that will suit your tastes on the Boboli website.  The man behind the recipes, Chef Mark, knows how hard it is to please a whole family of picky eaters, he has a set of 7 year old twins!  My children did try this pizza, but next time I will more than likely do two different pizzas as they weren't too thrilled with chicken on their pizza.  Anything out of the ordinary and it's a fight to get them to gobble it up.  My six year old did eat one whole piece, though, and said she enjoyed it.
