Couponing...It's What's for Dinner: Oven Fried Chicken with Sides

Couponing...It's What's for Dinner

Every week I will scour the Pick'n Save sale add for delicious looking menu options, combine them with coupons(that may be able to be doubled), purchase these items and put them together for a complete meal.  I will also include how much I spent on everything, so we can see how to make a full meal for only a little bit of money.  This post will generally appear on Mondays, so that you have the option of getting these items on your trip to the store on Wednesday for double coupon day.

These items are on sale through May 2nd.  I started off with the Family Pack Split Chicken Breasts which were on sale for $0.99 per pound, for a total of $2.96.


Using the extra coupon pack that was included with the weekly add, I picked up a bag of frozen potato crowns, which cost $0.98.


That same pack included a coupon for steam and serve frozen vegetables, for only $0.88.  I got broccoli and cauliflower.


Finally, in the sale ad I found Pepperidge Farm Stone Baked Artisan Rolls.  They are on sale 3/$9, I picked up one bag, and had a coupon for $0.75 off, which doubled, so the one bag I got only cost $1.50.


I looked through one of our cook books to find a way to prepare the chicken, and decided to go with an oven fried preparation.  The following recipe is for 6 chicken breasts.

In a bowl combine 1/2 cup cornmeal, 1/2 cup bread crumbs, 1 tsp tarragon, 1 tsp ground ginger, 1/2 tsp salt, 1/4 tsp cayenne pepper, and 1/4 tsp pepper. (You could play around with some of these seasonings in order to make the breading more to your taste.)


In another bowl, whisk together 3 egg whites and 2 TBS milk.


Place 1/2 cup flour in a third bowl, then begin to prepare your chicken.  First coat the chicken with flour.


Then dip it in the egg white mixture.


Then roll it in the corn meal mixture.


Then place the coated chicken into a greased baking pan.


Put in a 350 degree oven for around 55 minutes, looking for an internal temp of 170 degrees.  With around 15 minutes left, you could place a little bit of butter on each piece of chicken, but you don't have to.

I ended up only using half the bag of the potato crowns, so that is only $0.49 towards the cost of our meal.


I also only used half the bag of rolls, adding only $0.75 to the cost of the meal.


The veggies get a quick turn in the microwave and then your dinner is ready.


The total cost for our dinner was:

$5.08
