Quick and Easy Recipe: Chicken Salad Sandwiches

This is what we had for dinner last night. It is one of my favorite summer sandwiches. It's yummy, easy, and cheap! The kids weren't crazy about it, but my husband and I love it. With this recipe, we easily get a couple days leftovers. In all honesty, the first time I made this my husband wasn't thrilled because he wasn't sure about the grapes. After he tried it, though, he changed his mind.  We serve ours on wheat bread with chips and some kind of fruit and red and green sliced peppers on the side.


Ingredients:

  • 2 1/2 cups diced cooked chicken
  • 4 bacon strips, cooked and crumbled
  • 1 (8 ounce) can sliced water chestnuts, drained
  • 1 cup halved red grapes
  • 3/4 cup mayonnaise or salad dressing
  • 1 tablespoon dried parsley flakes
  • 2 teaspoons finely minced onion
  • 1/4 teaspoon ground ginger
  • 1 dash soy sauce
  • salt and pepper to taste
Directions:

Combine chicken, bacon, water chestnuts, and grapes in large bowl; set aside. In another bowl, whisk together remaining ingredients; add to salad and toss to coat. Chill until serving.

**I have found that the longer I let it sit in the refrigerator after making, the better it tastes.  This is a great salad to make the night before and let sit overnight!
