Kick Start Your New Years: Quick, Cheap and Easy Recipe Day Five: Slow Cooker Chicken and Dumplings

Slow Cooker Chicken and Dumplings
Ingredients:
  • 4 skinless, boneless chicken breast halves

  • 2 tablespoons butter

  • 2 (10.75 ounce) cans condensed cream of chicken soup

  • 1 onion, finely diced

  • 2 (10 ounce) packages refrigerated biscuit dough, torn into pieces

  • 2/3 can of chicken broth



  • Directions:
    1. Place the chicken, butter, soup, and onion in a slow cooker, and fill with enough chicken broth to cover.
    2. Cover, and cook for 8 hours on low. About 2 hours before serving, place the torn biscuit dough in the slow cooker. Cook until the dough is no longer raw in the center.  There should be a total of 8 hours on low, so you would add the biscuits about six hours in.
    3. ENJOY!
    I season the chicken with some seasonal, garlic salt, cumin, salt and pepper.   It may seem like way too much liquid, but the biscuits soak it up.  I have tried to do this recipe before and put the biscuits in later, but they never seem to be done.  I found that 2 hours seems to be an adequete amount of time when you cook it on low.  I have also added cans of mixed veggies in when I add the biscuits.  But, that's just me trying to get my kid's veggie intake up.  It tastes great in this recipe, in my opinion!
