*FAMILY FAVORITE* Grandma H's Polish Sausage and Rice Recipe

Yummy! My mother in law makes this every year for Christmas and it is a requested favorite!  My children ALL love this dish and, since we are all quarantined in our houses for Easter this year, I decided I would make this special dish for them!

Here's what we had on our plates tonight as we celebrated Easter!

Polish Sausage and Rice

Ingredients:

  • 2 small boxes of Uncle Ben's Long Grain and Wild Rice
  • 1 diced medium green pepper
  • 1 medium chopped onion
  • 4 cups sauerkraut (drained and rinsed)
  • 8 tablespoons butter
  • 1 Party Pack of Polish Sausage
  • salt to taste (optional)
Directions:
  • Boil Sausage for 2 hours, slice up
  • Cook rice according to box
  • Saute pepper and onion in butter
  • Mix all ingredients with sauted vegetables
  • Salt, toss lightly
  • Bake in covered casserole for 1/2 hour at 350 degrees
